The avocado has a curious habit: it does not ripen while it is still hanging on the tree. It can stay up there for months, hard as a stone, and only begins to soften once it is picked, which means the tree works like a natural refrigerator. Botanically it is a fruit, and more precisely a berry with one enormous seed. This page shows a whole avocado with its bumpy skin next to one cut in half, the round pit sitting in the hollow. The skin can be a very dark green, almost black, the flesh a light green turning yellowish near the middle, and the pit a warm brown.
